Macaroni Salad

Our neighbors invited us over for a pool party so I decided to make some pasta salad to bring over.  I found this recipe and thought I would give it a try.


 It was perfect and light!

Macaroni Salad (modified from here)
4 cups uncooked elbow macaroni
1 cup mayonnaise
1/4 cup distilled white vinegar
1/3 cup white sugar
2 tbsp yellow mustard
1 1/2 tsp salt
1/2 tsp ground black pepper
1 onion, chopped
2 stalks celery, chopped
1/2 green bell pepper, seeded and chopped
1/2 red bell pepper, seeded and chopped

Directions
Bring a large pot of lightly salted water to a boil.  Add the macaroni, and cook until tender.  Follow instructions on the package.  Rinse under cold water and drain.


In a large bowl, mix together the mayonnaise, vinegar, sugar, mustard, salt and pepper.  Stir in the onion, celery, green and red pepper, and macaroni.  Refrigerate overnight.

I thought it was delicious and so did my family.
