Caramel Popcorn

I attempted to make rainbow popcorn, but wasn't too successful.



Red and Green turned out great, but when I tried to mix colors for orange and blue, it made variations of red and green. Despite the difficulties in mixing colors, it turned out delicious so I will definitely make this popcorn again.

Caramel Popcorn

3 bags butters and salted popcorn, popped (remove any kernels) unpopped
3/4 cup butter
1 1/2 cups brown sugar
1/4 + 1/8 cup light corn syrup
1/4 + 1/8 teaspoons baking soda
1 teaspoon vanilla extract
food coloring

Preheat oven to 250 degrees Fahrenheit.



Pop 3 bags of popcorn. I used 2 1/2 to get it more caramelly (love my description?).



In a medium saucepan, melt together the butter, brown sugar, and corn syrup. Bring to a boil, sitting frequently.

Boil over low heat for five minutes. Remove from heat and add the baking soda and vanilla



Place each bag of popcorn in rimmed cookie sheet coated with cooking spray.



If you want to color the caramel, now would be the time to do so. Then, pour the caramel over the pan of popcorn. Toss to coat. Don't use your hands as it will be very hot!

Bake for 45 minutes, rotating pans and stirring each pan with a spatula coated with cooking spray every 15 minutes. This will allow the caramel to be evenly coated. Cool completely before serving.



This has definitely been a favorite since I have made it.
